MANGO ENERGY BITES

INGREDIENTS:

  • 1 LIME

  • 1 CUP MANGO CHIPS

  • MEDJOOL DATES, WHOLE PITTED

  • 1 PINCH OF SEA SALT

  • 1/3 CUP COCONUT UNSWEETENED

  • 2 TBSP HEMP SEEDS

  • 1 1/4 CUP WALNUTS OR CASHEWS

DIRECTIONS:

PREHEAT OVEN TO 350 DEGREES AND ARRANGE NUTS ON A BAKING SHEET. TOAST NUTS FOR 8 - 12 MINUTES UNTIL LIGHT GOLDEN BROWN. LET COOL AND PUT INTO THE FOOD PROCESSOR UNTIL THEY ARE A FINE CONSISTENCY. SET ASIDE. ADD MANGO CHIPS AND PITTED DATES TO THE PROCESSOR AND MIX UNTIL IT IS A ROUGH PASTE, STICKY DOUGH.

ADD NUTS BACK INTO THE FOOD PROCESSOR WITH DATES AND MANGO CHIPS. ADD HEMP SEEDS, COCONUT, LIME ZEST, AND SEA SALT. MIX UNTIL IT FORMS A DOUGH THAT YOU CAN SHAPE. ADD MORE COCONUT OR HEMP SEEDS IS IF IT FEELS STICKY OR TOO WET. SCOOP OUT A ROUNDED TABLESPOON, THEN ROLL IS SHREDDED COCONUT AND HEMP SEEDS. STORE ROOM TEMPERATURE UP TO 3-4 DAYS, OR IN THE REFRIGERATOR FOR 1 WEEK.
