Coconut Pineapple Macaroons

Pineapple Coconut Macaroons

Yields: 20 macaroons Prep: 10 minutes Cook Time: 20-25 minutes



INGREDIENTS

• 1 Cup Sisters Dried Coconut Pineapple

• 14 oz Sweeted Shredded Coconut

• 6 Tbsp Flour

• 2/3 Cup Sugar

• 1/4 tsp Salt

• 5 Large Egg Whites

• 1/4 tsp Vanilla Extract

DIRECTIONS

1. Pre-heat oven to 325F

2. In a large mixing bowl combine coconut, pineapple, flour, sugar and salt.

3. In a small bowl, separate egg whites from yolks. Stir in vanilla.

4. Add vanilla & egg white mixture to the coconut mixture and combine well.

5. Drop by spoon onto parchment lined cookie sheet. Bake for 20 minutes. Let cool. Store in air tight container.
